A Farmer’s Legacy: The Story of Edil Danilo Sanchez
Edil Danilo Sanchez is a third-generation coffee farmer whose journey is deeply rooted in the fertile soils of Honduras. His grandfather, originally from the southern region of the country, migrated to the department of El Paraíso in search of a better future. There, he planted the seeds of a coffee-farming legacy that would grow with each generation. From a young age, Danilo immersed himself in the world of coffee, learning the intricate processes of planting, harvesting, and post-harvest management by walking the coffee fields alongside his family.
In 2016, Danilo purchased Finca Los Cedros, a 9.06-hectare farm located at an elevation of 1300–1350 meters. The journey to establish the farm was not without challenges; Danilo faced significant financial hurdles, including going into debt to plant and maintain his coffee trees. Despite these obstacles, his passion for producing high-quality coffee never wavered. Today, his farm is a thriving example of innovation and excellence, specializing in the Parainema coffee variety.
The Art of Coffee Production
At Finca Los Cedros, Danilo employs meticulous techniques to ensure the highest quality in every bean. The Parainema variety used in Muse undergoes a washed anaerobic fermentation process, a method that enhances the coffee’s vibrant flavor profile. The beans are then solar-dried, a sustainable approach that preserves their integrity while reducing environmental impact.
This dedication to quality shines through in every cup of Muse. The coffee boasts a honeyed aroma, bright notes of passionfruit and jam, a lively acidity, and a sweet, lingering finish. With a cupping score of 86.9, it’s a testament to Danilo’s commitment to excellence.

Danilo’s success is bolstered by the support of the Honduran Coffee Alliance (HCA), a cooperative that helps aggregate and export coffee from small-scale farmers like him.
